Bodrul Hussain, our father, the executive chef, was raised in humble surroundings. A village on the banks of the Barak River in India. His father ran a biryani House in East Bengal. His grandfather was the legendary Abdhul Samad Choudhury, who made his name as a cook in the Bengal Lancers.
A well-known pacifist, Samad would cause a stir by riding into skirmishes backwards. Full-bellied soldiers often credited Samad’s extraordinary cooking for their victories.
His fight was in the kitchen, not on the field. He opted for the heat of the tandoor over the heat of battle. Hussain like his father and grandfather before him showed great entrepreneurial spirit and a passion for food. He found himself travelling to Paris, hoping to widen his palate in the brasseries there. His last stop was Stockbridge, Edinburgh. With its distinct character, leafy streets and squares, Hussain knew it would be the perfect setting for his vision. In 1985, honouring his grandfather, a new Lancer rode into battle backwards.
